What is the best way to test my product on PolygonZKEVM? Other rollups provide scripts for local deployments on ganache (or some other private chain). Is this feasible with Polygon ZKEVM? What would be the best alternative?

The recommended L1 network for setting up zkEVM for testing is Sepolia. You can refer to the documentation and add Sepolia RPC for the L1 node RPC during the setup process. Please follow the steps outlined in the documentation here: zkEVM Setup Documentation.
