Although the current Issuer Node setup doesn’t have a GUI like PolygonID Platform, are we planning to create an interactive UI which can also be used by non-tech folks?

Yes, it planned to create a UI on top of the Issuer Node. That is part of the scope of the next release but it will be very minimal that include the necessary tools that test that everything is working properly (transition on identities state, create/revoke a credential).
