How would we be able to move our newly minted token from the eth to the polygon bridge?

In that case, you have to map your token first using the POS bridge. you need to create another token of the same standard as your already existing one, which will be deployed on the ChildChain -which is a polygon in your case- after that, you need to submit a mapping request for the polygon team to be resolved.
